Chicken Piccata
Chicken Piccata is a delightful and easy-to-make Italian dish that features tender chicken breasts in a tangy lemon-caper sauce. This light, but savory recipe will easily be a family favorite.
Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
Italian Seasoning
1/2 Cup all-purpose flour
4 TBSP olive oil
1 Cup chicken broth
1/2 Cup heavy cream
1 TBSP fresh lemon juice (approximately 1/2 lemon)
3 TBSP capers, drained
2 TBSP unsalted butter
2 TBSP minced garlic
1/4 Cup fresh parsley, chopped (for garnish)
1/4 Cup thinly sliced lemon wedges (for garnish)
Instructions
Prepare the Chicken:
- Start by slicing the chicken breast into two halves horizontally.
- Season both sides the chicken breasts with salt, pepper and Italian Seasoning.
- Dredge each piece in flour, shaking off any excess.
Cook the Chicken:
- In a large skillet, heat the olive oil over medium-high heat.
- Once the oil is hot add the chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the skillet and set aside on a plate.
Make the Sauce:
- In the same skillet, add the butter & garlic until melted.
- Add chicken broth, heavy cream, lemon juice, and capers.
- Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet for extra flavor.
- Reduced heat and let it simmer for about 2 minutes continually stirring.
- Once finished turn off heat, the sauce will slightly thicken as it cools.
Combine and Garnish:
- Return the chicken breasts to the skillet and spoon the sauce over them.
- Let the chicken simmer in the sauce for another 2-3 minutes to absorb the flavors.
- Sprinkle with freshly chopped parsley and thinly sliced lemon wedges before serving.
Serve:
- Serve your Chicken Piccata over a bed of pasta, rice, or mashed potatoes and alongside steamed vegetables or salad for a complete meal.
